Question : What is the best way to upgrade AD/Exchange Server

I am currently running a Windows 2000 Server w/ Active Directory, DHCP, DNS, and an Exchange 2000.  I recently acquired two HP DL380G6's and am looking for the best way to migrate/upgrade to these servers.  I am planning on running Windows Server 2008 and Exchange 2007.

My first inclination is to seperate AD and Exchange...but it's just an idea.  Anyway...this is my first go at this type of migration and there are about 100 accounts/mailboxes online.

If someone could help point me in the right direction it would be greatly appreciated.

AD 2000 to 2008:
1) Run ADPREP /forestprep /domainprep and /gpprep on the Infrastructure Master.
2) Run DCPROMO on the new servers
3) Move FSMO roles from one of the old DCs to one of the new
4) Demote the old DCs to member servers.
