Good question, I personally haven't looked into documentation of GP's SOX compliance, but here is what I found. I'm not a SOX expert, but my limited understanding is that a product is not necessarily SOX compliant--only organizations can be SOX compliant. It is the procedures and processes that an organization implements, in conjunction with certain supporting features of the ERP software, that make an organization SOX compliant.
Attached is a white paper that discusses achieving compliance objectives with Dynamics GP.
And here is a web page that lists a book that supposedly has a chapter discussing GP's SOX compliance:
