Question : Access 2003 to 2007 customize menu ribbon

I'm not certain if I'm going to make it into Access 2007.  I just installed it.  I've been a self taught Access developer since Access 2 and 2007 is a foreign country.  My primary concern is what the user sees on the screen.  i developed a system for a notforprofit org that works with homeless addicted people.  The persons who enter data are often not trained at all with computers.  Consequently, I've made the screens as nontechnical as possible and use mde's.
Across the top of the screens are customized menus for the various processes undertaken by the organization.  A click on one of the options will bring up the screen for that process.  I'll attach an example.  
My primary question is:  What does the user have to see in 2007 that he/she didn't see on the screens in 2003? Can I duplicate what I've done in 2003 menuwise?  I understand that I can bring some things forward from a 2003 app, but I would like to use 2007 to develop what I need.
