How do you setup the Edge Transport Role in Exchange 2010 if you only have 1 server in the organization?

I have done this with Exchange 2007 however the option is grayed out when I try and add the role to an existing Exchange 2010 installation from the CD.

This guide from the Microsoft Exchange team for Exchange 2007 should be followed. It is practically identical to Exchange 2010.
