Question : recover contacts from user profile

Is it possible to recover contacts from a users profile that has since left the company?
Situation: A user left several months ago. User is out of the system and mailbox deleted. The user used cached outlook 2000 on his PC. We now need to get to contacts that the user had. Is it possible to get them from the profile of the users PC? I was able to recover the outlook.ost file and retrieve emails that way but I do not see any contacts. Are they stored in another location? I do not have a backup or I would have already tried that.
